Ingredients:

  • 1 Napa Cabbage, thinly sliced or shredded

  • 3-5 Carrots, thinly sliced into matchsticks 

  • 1 Kohlrabi, peeled and thinly sliced into matchsticks

  • 1 tbsp fresh ginger, grated

  • 1 shallot, minced

  • 2 tbsp miso 

  • 2 tbsp canola oil

  • 2 tbsp rice vinegar

  • 1 tbsp tamari or soy sauce

  • 1 tsp toasted sesame oil

  • 2 tbsp water

Combine dressing ingredients (ginger, shallot, miso, canola oil, rice vinegar, tamari and toasted sesame oil) in a food processor or blender. Pulse until well combined, then add water and blend until smooth. In a large bowl combine thinly shredded napa cabbage, carrots, and kohlrabi.

Toss with dressing (starting with about 3/4, to not overly dress) and serve. Garnish with sesame or pumpkin seeds. Dressing can also be adjusted to simple olive oil, apple cider vinegar, honey and salt combination, making the salad more versatile as a complement to many meals.
